Ingredients:

For the Bangers (Sausages):

  • 8 good-quality pork sausages (traditional British bangers if possible)
  • 1 tablespoon vegetable oil

For the Mash (Mashed Potatoes):

  • 2 pounds (900g) potatoes (such as Russet or Yukon Gold)
  • 1/2 cup whole milk
  • 4 tablespoons unsalted butter
  • Salt and black pepper, to taste

For the Onion Gravy:

  • 2 large onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef or vegetable broth
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper, to taste

Instructions:

1. Prepare the Sausages (Bangers):

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add the sausages to the skillet and cook, turning occasionally, until they are browned on all sides and cooked through. This should take about 15-20 minutes. Ensure the sausages are cooked to an internal temperature of 160°F (71°C).

2. Make the Mashed Potatoes (Mash):

  • While the sausages are cooking, peel and cut the potatoes into chunks. Place them in a large pot and cover with cold water. Add a pinch of salt to the water.
  • Bring the water to a boil and simmer the potatoes for about 15-20 minutes, or until they are fork-tender.
  • Drain the potatoes and return them to the pot. Mash them with a potato masher or pass them through a potato ricer.
  • Warm the milk and butter in a separate saucepan or in the microwave. Add this mixture to the mashed potatoes and stir until smooth and creamy. Season with salt and black pepper to taste.

3. Prepare the Onion Gravy:

  • In a separate skillet, melt 2 tablespoons of butter over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until they are soft and caramelized, which should take about 15-20 minutes.
  • Stir in the flour and cook for another 2-3 minutes, stirring constantly.
  • Gradually pour in the beef or vegetable broth, stirring to combine. Bring the mixture to a simmer, and then add Worcestershire sauce, salt, and black pepper. Continue to simmer until the gravy thickens.

4. Serve:

  • Place a portion of mashed potatoes on each plate, top with sausages, and drizzle with the onion gravy.
