Vegan Wafer Biscuits

Ingredients:

For the Wafer Batter:

1 1/2 cups all-purpose flour

1/2 cup granulated sugar (ensure it’s vegan—some sugars are processed with bone char)

1/2 cup vegan butter (or neutral oil like canola or melted coconut oil)

1/2 cup unsweetened plant milk (such as almond, soy, or oat milk)

2 tablespoons aquafaba (the liquid from canned chickpeas) or 2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water, mixed and left to gel for 5–10 min)

1 teaspoon vanilla extract

1/2 teaspoon baking powder

A pinch of salt

For the Wafer Filling (Optional):

Vegan chocolate ganache (made with dairy-free chocolate and plant milk)

Fruit jam

Coconut whipped cream or other vegan whipped topping

Instructions:

Preheat the Waffle Iron:
Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease with non-stick spray or a bit of oil.

Prepare the Wafer Batter:
In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, combine the aquafaba (or flax eggs), melted vegan butter, plant milk, and vanilla. Whisk until well combined.

Combine Wet and Dry Ingredients:
Gradually add the wet mixture to the dry ingredients. Stir until smooth, but don’t overmix. A few small lumps are fine.

Cook the Wafers:
Spoon a small amount of batter into the preheated waffle iron. Cook until golden and crisp, as per your waffle iron’s instructions.

Cool the Wafers:
Carefully remove and place on a wire rack to cool and crisp up further.

Add Optional Filling:
Once cooled, optionally spread a vegan filling between two wafers to make sandwich cookies.

Serve and Enjoy:
Crisp, golden, and entirely plant-based—perfect for snacking or dessert!
