Oatmeal Biscuits

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup raisins or chocolate chips (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Make sure your oven is fully preheated before baking.

2. Prepare Dry Ingredients:

  • In a mixing bowl, combine the all-purpose flour, old-fashioned oats, baking powder, baking soda, salt, and ground cinnamon (if using). Mix well and set aside.

3. Cream Butter and Sugar:

  • In a separate bowl, cream the softened unsalted butter and granulated sugar together until the mixture is light and fluffy, which should take about 2-3 minutes.

4. Add Egg and Vanilla:

  • Beat in the egg and pure vanilla extract until well combined.

5. Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.

6. Add Optional Ingredients:

  • If you want to include raisins, chocolate chips, or any other optional ingredient, gently fold them into the dough at this stage.

7. Form Biscuits:

  • Drop rounded tablespoons of the dough onto an ungreased baking sheet, leaving some space between each biscuit. You can use a cookie scoop for more uniform biscuits.

8. Flatten Slightly:

  • Use the back of a fork to gently flatten each biscuit.

9. Bake:

  • Bake in the preheated oven for about 10-12 minutes or until the biscuits are lightly golden brown on the edges.

10. Cool and Serve:

  • Allow the oatmeal biscuits to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
