Homemade Chocolate Sandwich Cookies

Ingredients:

For the Chocolate Cookies:

  • 1 cup (2 sticks) unsalted butter, softened

Instructions:

For the Chocolate Cookies:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

2. Cream Butter and Sugar:

  • In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy, which should take about 2-3 minutes.

3. Add Egg and Vanilla:

  • Beat in the egg and vanilla extract until well combined.

4. Sift Dry Ingredients:

  • In a separate bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt.
