Classic Rice Pudding

Ingredients:

  • 1/2 cup long-grain white rice
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup raisins (optional)
  • 2 large eggs
  • Ground nutmeg, for garnish (optional)

Instructions:

1. Rinse and Soak the Rice:

  • Rinse the long-grain white rice under cold running water until the water runs clear. This removes excess starch.
  • In a bowl, soak the rice in enough water to cover it for about 30 minutes. Drain the rice.

2. Simmer the Rice:

  • In a large, heavy-bottomed saucepan, combine the drained rice and 2 cups of whole milk.
  • Bring the mixture to a gentle boil over medium heat, stirring occasionally to prevent sticking.
  • Once it comes to a boil, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the milk has been mostly absorbed. Stir occasionally.

3. Add Sugar and Flavorings:

  • Stir in the granulated sugar, salt, pure vanilla extract, ground cinnamon, and raisins (if using).

4. Continue Cooking:

  • Gradually add the remaining 2 cups of whole milk to the rice mixture and continue to cook over low heat. Stir frequently until the mixture thickens and becomes creamy. This should take about 20-30 minutes. Be patient, as this step is crucial for the rice pudding’s texture.

5. Beat the Eggs:

  • In a separate bowl, beat the large eggs.

6. Temper the Eggs:

  • Slowly add a small amount of the hot rice pudding to the beaten eggs while whisking continuously. This will temper the eggs and prevent them from curdling when added to the hot mixture.

7. Combine the Mixture:

  • Pour the tempered egg mixture back into the saucepan with the rice pudding. Stir well.

8. Continue Cooking:

  • Cook the mixture over low heat for an additional 2-3 minutes, stirring constantly to ensure the eggs are fully incorporated and the pudding thickens.

9. Cool and Serve:

  • Remove the rice pudding from the heat and let it cool for a while. It will thicken further as it cools.
  • You can serve the rice pudding warm or refrigerate it for a few hours until it’s chilled.

10. Garnish and Enjoy:

  • Before serving, sprinkle the rice pudding with ground nutmeg, if desired.
  • Serve your homemade rice pudding as is or with additional toppings such as cinnamon, whipped cream, or a sprinkle of raisins. Enjoy!
