Classic Pecan Pie

Ingredients:

For the Pie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2-4 tablespoons ice water

For the Pecan Pie Filling:

  • 1 cup granulated sugar
  • 1/4 cup dark corn syrup
  • 1/4 cup light corn syrup
  • 1/4 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups pecan halves

Instructions:

For the Pie Crust:

  1. If Making Your Own Pie Crust: In a large mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed unsalted butter. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, one tablespoon at a time, and mix until the dough just comes together. You may not need to use all the water. Be careful not to overwork the dough. Form it into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.

For the Pecan Pie Filling:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the granulated sugar, dark corn syrup, light corn syrup, melted unsalted butter, eggs, and pure vanilla extract until well combined.
  3. Stir in the pecan halves until they are evenly coated with the mixture.

Assembling and Baking:

  1. Roll out the chilled pie crust on a floured surface to fit a 9-inch (23 cm) pie dish. Place the crust in the pie dish, trim any excess dough from the edges, and crimp the edges as desired.
  2. Pour the pecan pie filling into the prepared pie crust.
  3. Place the pie in the preheated oven and bake for 50-60 minutes, or until the filling is set, and the top is golden brown. If the crust starts to brown too quickly, you can cover the edges with aluminum foil.
  4. Remove the pie from the oven and allow it to cool on a wire rack for at least 2 hours before serving. The filling will set as it cools.
  5. Slice and enjoy your homemade pecan pie! You can serve it on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
