Instructions:
For the Pie Crust:
- If Making Your Own Pie Crust: In a large mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed unsalted butter. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, and mix until the dough just comes together. You may not need to use all the water. Be careful not to overwork the dough. Form it into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
For the Pecan Pie Filling:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the granulated sugar, dark corn syrup, light corn syrup, melted unsalted butter, eggs, and pure vanilla extract until well combined.
- Stir in the pecan halves until they are evenly coated with the mixture.
Assembling and Baking:
- Roll out the chilled pie crust on a floured surface to fit a 9-inch (23 cm) pie dish. Place the crust in the pie dish, trim any excess dough from the edges, and crimp the edges as desired.
- Pour the pecan pie filling into the prepared pie crust.
- Place the pie in the preheated oven and bake for 50-60 minutes, or until the filling is set, and the top is golden brown. If the crust starts to brown too quickly, you can cover the edges with aluminum foil.
- Remove the pie from the oven and allow it to cool on a wire rack for at least 2 hours before serving. The filling will set as it cools.
