Ingredients:
For the cake:
- 2 cups all-purpose flour
- 1 and 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 and 1/2 teaspoons baking powder
- 1 and 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 teaspoons pure vanilla extract
- 1 cup boiling water
For the chocolate frosting:
- 1 cup unsalted butter, softened
- 1 and 1/2 cups unsweetened cocoa powder
- 5 cups confectioners’ sugar (powdered sugar)
- 1/2 cup milk
- 2 teaspoons pure vanilla extract
Instructions:
For the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined, but do not overmix.
- Stir in the boiling water. The batter will be thin; this is normal.
- Pour the batter equally into the prepared cake pans.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and place them on a wire rack to cool completely.
For the Chocolate Frosting:
- In a large mixing bowl, sift the cocoa powder to remove any lumps.
- In another large mixing bowl, beat the softened butter until it becomes creamy and smooth.
- Gradually add the sifted cocoa powder to the butter and mix until well combined.
- Add the confectioners’ sugar, one cup at a time, and mix on low speed to avoid a sugar dust cloud.
- Add the milk and vanilla extract, then beat the frosting on medium-high speed until it’s smooth and spreadable. If it’s too thick, you can add a little more milk.
Assembly:
- Place one cake layer on a serving plate. Spread a layer of chocolate frosting over the top.
- Place the second cake layer on top of the first and frost the top and sides of the cake with the remaining chocolate frosting. You can use an offset spatula for a smoother finish.
- Decorate the cake as desired, perhaps with chocolate shavings, sprinkles, or additional frosting details.
- Slice and enjoy your delicious homemade chocolate cake!
This chocolate cake is perfect for any occasion and sure to satisfy your sweet tooth. Enjoy!
