Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted and cooled
- 2 large eggs
- 1 cup plain Greek yogurt
- 1 teaspoon vanilla extract
- 1 and 1/2 cups fresh or frozen blueberries (if using frozen, do not thaw)
Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well.
2. Mix the Dry Ingredients:
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Ensure the dry ingredients are well combined.
3. Combine Wet Ingredients:
In a separate bowl, beat the melted and cooled unsalted butter, eggs, Greek yogurt, and vanilla extract until the mixture is smooth.
4. Combine Wet and Dry Mixtures:
Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
5. Add Blueberries:
Gently fold the blueberries into the muffin batter. If you are using frozen blueberries, toss them in a bit of flour to prevent them from sinking to the bottom of the muffins.
6. Fill the Muffin Cups:
Scoop the muffin batter into the prepared muffin tin, filling each cup about 3/4 full.
7. Optional Streusel Topping (Optional):
If you want to add a streusel topping for extra texture and flavor, mix 1/4 cup of granulated sugar with 2 tablespoons of cold, cubed butter and 1/4 cup of all-purpose flour until it resembles coarse crumbs. Sprinkle the streusel over the muffin batter.
8. Bake:
Place the muffin tin in the preheated oven and bake for about 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Baking times may vary slightly, so start checking around 15 minutes.
9. Cool and Enjoy:
Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Once they have cooled, you can enjoy your homemade blueberry muffins!
These muffins are best enjoyed when they’re fresh, but you can store any leftovers in an airtight container at room temperature for a day or two. Enjoy your delicious blueberry muffins with a cup of coffee or tea!
